Head Chef – Specialty Cuisine

New opening of a specialty restaurant directly at the Zürich Oerlikon station

In January 2027, we are opening a specialty restaurant for Levantine-Anatolian cuisine: 650 m², 150 indoor seats, open 7 days a week from breakfast to dinner, with a new, high-quality equipped kitchen. Our offering consists predominantly of traditional dishes from the Levant and Anatolia, the preparation of which requires specific expertise.
We are looking for as of 01.12.2026 a
Head Chef Levantine-Anatolian specialty cuisine 100 %

Your tasks:

Setup and management of the kitchen with a team of approx. 10–12 employees
Development of the menu for breakfast, lunch and dinner based on traditional Levantine and Anatolian recipes
Preparation and standardization of cold and warm mezze, grilled dishes, braised dishes, traditional breakfast and desserts
Production of homemade basic products: doughs and breads, spice blends, pastes, pickles
Guidance and training of the team in traditional preparation techniques
Calculation, purchasing (incl. specialty import goods), inventory management
Hygiene, self-control and allergen labeling

Your profile – requirements:

Completed vocational training as a cook (EFZ or equivalent recognized qualification)
At least [5] years of professional experience in Levantine and/or Anatolian specialty cuisine
Of which at least [2] years in a leadership position (Head Chef or Sous-Chef)
Sound, practical knowledge of traditional techniques of these cuisines, in particular:
Dough production by hand (e.g. Yufka, Lavash, Pide)
Grilling over charcoal [only if the kitchen has a charcoal grill]
Preparation of classic mezze as well as production of own spice blends and pastes
Regional dishes of Southeast Anatolia and the Levant
Experience in calculation, purchasing and leadership of a kitchen team
Good German language skills
